Bright and jammy, the berries are unmistakeable! Well-articulated raspberry aromas meet your nose first. As you take a sip, your palate is totally taken over by berry brambles. The natural tartness of the berries provides a great balance, helping this dry wine to come across as surprisingly juicy.

Production Notes:

In October of 2022, 600lbs of marionberries, 31 gallons of unfermented Dolgo crab apple juice were combined in a stainless steel tank and sealed. Next, the berries and juice were stirred/turned over daily and CO2 gas was flushed through the tank to create an anaerobic environment. Fermentation was allowed to begin spontaneously and reached peak activity by day 5. On day 13, the berry skins + pulp were separated from the wine via centrifuge and the wine was placed in cold storage until packaging. 86 gallons of wine were collected . In January 2023, the wine was pulled out of cold storage the day before canning was scheduled. On the day of, yeast from an active batch was mixed in and 2023 Sleep talker was canned! A small amount of nitrogen was added to the cans to help them keep their structure as fermentation was completed in the can. The cans were left at room temperature while the yeast completed.

This wine received no sulfur additions.
